Handmade Shortbreads Passion for Puddings Continues to Grow- January 29th 2024


Janice and Tom's shortbread recipe is based on an old family mix, handed down from Tom's great grandmother from Edinburgh.

It was Janice and Tom Park's success in the restaurant business that founded The Handmade Shortbread Company in 2011. Excelling at providing delicious shortbread and puddings to top hotels and restaurants, the word spread fast, and soon more and more local hotels ordered the products. 

Demand rose quickly and the factory opened in Hamilton, Scotland in 2012. Janice and Tom developed the shortbread recipe based on an old family mix, handed down from Tom's great grandmother from Edinburgh. Janice and Tom have also based their amazing sticky toffee pudding recipe on one from a dear family friend from Peterhead, that has been developed and refined using hand crafted methods.

The Handmade Shortbread Company in-house team continues to develop exciting new products. True to the original recipes, they use top quality ingredients, traditional methods resulting in a truly delicious mouthwatering range. They may be small, but their products are delicious and of the best quality on the market today.

 

 

 

Their puddings

Proudly made in Scotland and handmade with the finest ingredients, they make Sticky Toffee Pudding with toffee sauce. 

The smell of warm toffee is irresistible to most, and that's why they created the ultimate comforting pudding, delicious with ice cream or pouring cream. This quality product comes in individual portions or a banqueting portion, allowing chef to cut into their desired portion size as well as a retail pack for Supermarkets.

Busy chefs love these products because the melt in the mouth sauce is in a separate plastic pot, which can be heated at the same time as the pudding and poured over to give an authentic 'made in-house' look. The product can be heated straight from the microwave meaning no waste, happy customers and a happy chef!

 

Their passion for puddings continues to grow

They supply most of the leading Foodservice companies in Scotland and across the North of England, who in turn supply to many top hotels and restaurants through Scotland and Northern England, and it continues to grow!. 

Their products can also be found in leading retailers in Scotland, such as Morrison's and Spar stores, where you can find the twin pack puddings. Their 6 pack puddings and Banqueting Slab range are supplied to Foodservice partners.


Handmade Shortbread’s relationship with Riggs Autopack 

This began in 2017 when they purchased a Model 1000 Series 3 Depositor to work automatically with a third-party supplied Rotary Pot Machine. This depositor was supplied as a direct feed configuration, connected to an outlet on a mixing vessel, and used to deposit 70g of sticky toffee sauce into plastic pots.

It provides a clean enclosed system for taking the product from the mixing vessel directly into the pot, reducing product wastage. This has also proved to be a very effective way of depositing the product as the production time has been reduced dramatically when compared to hand filling the pots.

In July 2023, they purchased a Model 1000 Series 3 Maxi Depositor from Riggs Autopack to deposit 5kg of sticky toffee batter mix into baking trays. An operator then uses a specially designed scraper to level the batter. This new bulk depositor was again configured as a direct feed system, connected to a mixer outlet.

Handmade Shortbread previously mixed and deposited the batter into trays by hand. This whole operation was conducted by 2 persons, now it’s just a single person operation, saving 45 minutes production time per 120 kg batch.
